乳化剂是能够乳浊液中各种构成相之间的表面张力，使之形成均匀稳定的分散体系或乳浊液的物质。乳化剂是表面活性物质，分子中同时具有亲水基和亲油基，它聚集在油/水界面上，可以降低界面张力和减少形成乳状液所需要的能量，从而提高乳状液的能量

食用乳化剂除具有乳化作用外尚有以下功能：

1．与淀粉结合防止老化，产品质构。2．与蛋白质相互作用增进面团的网络结构，面筋网，增强韧性和抗力，使蛋白质具有弹性，增加体积。3．防粘及防熔化在糖的晶体外形成一层保护膜，防止空气及水分侵入，提高制品的性，防止制品变形，同时降低体系的粘度，防止糖果熔化。4．增加淀粉与蛋白质的润滑作用，增加挤压淀粉产品流动性而方便操作。5．液体在液体中的分散，制备W/O乳化体系，产品稳定性。6．降低液体和固体表面张力，使液体扩散到全部表面，是的润滑剂。7．改良脂肪晶体脂肪晶体有多种晶形，其中以β-晶形较为常见与稳定，由于晶体粒子大，熔点高，不适于焙烤产品，容易产生“砂粒”乳化剂可控制晶体性状大小和生长速度，稳定β-晶形，使之转变成为β-晶形，以固体脂肪为基质的产品组织结构，对装饰用人造奶油、冰淇淋、巧克力等效果尤为显著。8．稳定气泡和充气作用内含饱和脂肪酸的乳化剂，对水溶液中的泡沫有稳定作用，可做泡沫稳定剂，使产品形成的气溶胶体，从而提高产品的多孔性，品质。

9．反乳化-消泡作用在某些加工过程中需要破乳和消泡，而加入相反作用的乳化剂，以破坏乳液的平衡，含有不饱和脂肪酸的乳化剂，具有泡沫的作用，可做消泡剂用于乳制品加工。10．抗腐败保鲜作用乳化剂可有的作用，常以表面涂层的方法用于水果保鲜。

乳化作用

起乳化作用的有乳化香料，赋予饮料以香气和浊度，用高HLB值的聚甘油脂肪酸酯及皂树皂苷，可调制成乳化香料。添加乳化香料的饮料多属酸性，而聚甘油脂肪酸酯和皂树苷耐酸性优，因而合适。亲水性好与耐酸性高的卵磷脂也可使用。

应用

食品

焙烤及淀粉制品

增加面筋网、充气、提高发泡性，使焙烤食品的结构细密；增大体积，使产品膨松柔软；保持湿度，防止老化，便于加工，延长货架寿命。

在糕点中使脂肪均匀分散，防止油脂渗出，口感，提高脆性，并能减少蛋的用量（用量一般为0.3%~1%）

冰淇淋

增强乳化、缩短搅拌时间。有利于充气和稳定泡沫，使制品产生微小冰晶和分布均匀的微小气泡，提高比体积，热稳定性，从而质地干燥、疏松、保形性好，表面光滑的冰淇淋产品。用量为0.2%~0.5%。

人造奶油

油水相容，将水分充分乳化分散，提高乳液的稳定性，用量为0.1%~0.5%。

巧克力

增加巧克力颗粒间的摩擦力和流动性，降低粘度，增进脂肪分散，防止起霜。提高热稳定性，提高产品表面光滑度。

糖果

使脂肪均匀分散，增加糖膏的流动性，易于切开和分离，提高生产效率，增进产品质地，降低粘度，口感。

口香糖

提高基料混溶性、均匀性、可塑性、脆性、防止生产时的粘着，从而提高生产效率，改香料的乳化和分散，增进风味，一般油包水型乳化剂效果佳。用量为0.5%~1%。

植物蛋白饮料

稳定油脂不分层，制备稳定的乳液。

食品中常用的乳化剂:（1）脂肪酸甘油单酯及其衍生物，如：甘油单硬脂酸酯、一硬脂酸一缩二甘油酯等。（2）蔗糖脂肪酸酯。（3）山梨醇酐脂肪酸酯及其衍生物，如：失水山梨醇单油酸酯（司盘80）、聚氧乙烯失水山梨醇单硬脂酸酯（吐温60）等。（4）磷脂，如：改性大豆磷脂。

乳化香精:稳定香料油的乳化，防止制品中香料的损失。

烘焙产品:乳化剂是一种具有亲水基和亲油基的表面活性剂。它能使互不相溶的两相（如油与水）相互混溶，并形成均匀分散体或乳化体，从而改变原有的物理状态。由于食品加工技术的提升，使得乳化剂在食品加工过程中扮演着相当重要的角色，受到烘焙业者广泛重视，并在烘焙产品中广为利用，进而改变产品的内部结构，提高了产品品质。

日化应用:乳化剂在日用化工的护理产品里常见的就是卸妆油的生产，卸妆油是油，里面添加了乳化剂，你把卸妆油涂到脸上，进行按摩，卸妆油把你脸上的油性彩妆以及污垢溶解后，再加水仔细按摩，就变成了乳白色，冲掉。冲洗后没有油腻感的，就说明乳化得很好，冲洗后仍然双手满脸油腻腻粘乎乎，就是乳化得比较差，当然，寒冷的温度下会影响这个过程，所以，在冬季大家好用温水来清洗。

除了卸妆油用到了乳化剂，化妆品中还有很多乳状液产品，你平时使用的面霜、乳液、卸妆乳、基本洁面大多数皆为乳状液，这些产品为了要实现包装盒上标识的至少三年的保质期，都需要使用乳化剂来提高稳定性。
